Apple Coffee Cake (Gluten free, Grain free)


  • 4 cups chopped organic apples
  • 1/2 cup water
  • 1 T cinnamon
  • 2 T coconut oil
  • 7 eggs (if you want to use fewer eggs, for each egg to be replaced, mix 1 tablespoon flax seed with 3 tablespoons water )
  • flax seed (optional if you want to use less eggs )
  • 3 T organic raw honey
  • 3 T coconut milk
  • 1 ½ T coconut flour
  • 1/3 tsp baking soda
  • 1/2 tsp apple cider vinegar
  • pinch of celtic salt


  1. Preheat your oven to 350 degrees. Grease up a baking dish with coconut oil and set aside.
  2. Chop the apples and saute them with water and cinnamon in a skillet until they are very soft. Fold in coconut oil until it's melted and set aside.
  3. In a separate bowl mix together coconut milk, eggs, coconut flour, honey, baking soda, apple cider vinegar, and cinnamon until well blended
  4. Add the apple mixture to the egg mixture and fill your baking dish with it.
  5. Bake for 45 minutes til golden brown.
  6. Remove from the oven and let cool for at least 10 minutes.
