If you feel like making a quick but delicious breakfast, I recommend making these paleo crepes. They are super easy and fast to prepare. If you haven’t tried cooking with tapioca flour, give it try. You will be amazed at how fantastic this gluten free flour works for most paleo recipes. It is also very economical and gives a smooth-textured consistency. It can be used in baking, thickening (instead of corn starch) and coating (it’s a perfect dredging flour). It is not only versatile, it is highly nutritious.
Why I use Tapioca flour
Tapioca Flour is a fine powder with the texture of cornstarch. It is derived from the cassava plant. Unfortunately, in America, when we think of tapioca, we think of tapioca pudding (that’s loaded with sugar). However, tapioca is so much more than that. In fact, in Africa, Asia and South America, tapioca is known for its nutritional benefits. First of all, tapioca flour is rich in iron (which is vital for producing red blood cells). It also helps carry oxygen from the lungs to other organs in the body. As you might know, iron deficiency results in headaches, fatigue and more. Tapioca flour is also high in fiber and it contains good amount of folic acid which protects us from cellular damage. Folic acid is important for the development of our cells and brain. Tapioca flour also contains potassium which is an important component of cellular and bodily fluids that help regulate heart rate and blood pressure.
Super Easy Paleo Crepes
Ingredients
- 1/3 cup Tapioca flour (I use this one)
- 1/3 cup ground buckwheat
- 2 eggs
- 2 tbsp. milk ( I use coconut milk)
- 3 tsp. coconut oil (liquefied)
- pinch of salt
Instructions
1. Blend together all ingredients until smooth.
2. Preheat your pan over medium-low heat (I use a cast iron skillet). Place 1 tablespoon of the coconut oil in the pan, swirling to coat the entire surface.
3. Pour 1/4 cup of the batter into the pan, swirling the pan while you pour to ensure the bottom is coated and the crepe is thin.
4. Cook the crepe for about 30 seconds on the first side until dry and slightly browned. Quickly flip it over and cook for about 30 seconds on the second side or until done.
5. Repeat with the remaining batter.
6. Roll the crepes with your favorite fillings. Or, just dip them in raw organic honey (my favorite way to eat crepes).
