Apple Coffee Cake (Gluten free, Grain free)
Ingredients
- 4 cups chopped organic apples
- 1/2 cup water
- 1 T cinnamon
- 2 T coconut oil
- 7 eggs (if you want to use fewer eggs, for each egg to be replaced, mix 1 tablespoon flax seed with 3 tablespoons water )
- flax seed (optional if you want to use less eggs )
- 3 T organic raw honey
- 3 T coconut milk
- 1 ½ T coconut flour
- 1/3 tsp baking soda
- 1/2 tsp apple cider vinegar
- pinch of celtic salt
Instructions
- Preheat your oven to 350 degrees. Grease up a baking dish with coconut oil and set aside.
- Chop the apples and saute them with water and cinnamon in a skillet until they are very soft. Fold in coconut oil until it's melted and set aside.
- In a separate bowl mix together coconut milk, eggs, coconut flour, honey, baking soda, apple cider vinegar, and cinnamon until well blended
- Add the apple mixture to the egg mixture and fill your baking dish with it.
- Bake for 45 minutes til golden brown.
- Remove from the oven and let cool for at least 10 minutes.
