This Coconut Paleo Cereal is seriously delicious! Most of all, this paleo coconut cereal is the easiest recipe you will ever find when it comes to making your own paleo cereal. You just need a bag of unsweetened coconut flakes (like this) and a couple more ingredients that, most likely, you already have in your cupboard. With this cereal, you are not only enjoying a delicious breakfast but also getting all the nutrients that coconut offers.

Coconut Paleo Cereal
Ingredients
- 2 cups fancy grade coconut flakes
- ¼ cup of coconut sugar (where to find)
- 1 heaping Tbls coconut oil (or butter)
- ½ tsp. cinnamon
Directions
- In a small saucepan heat coconut oil or butter. Mix in cinnamon and remove from heat.
- In a bowl, add coconut flakes and drizzle the coconut oil mixture over it. Toss lightly with a spoon.
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
- Bake in 350-degree oven for about 12-15 minutes, watching carefully the whole time to make sure they don’t over-brown or burn. My oven takes a little longer to brown the flakes.
- Remove from oven and let cool.
- Store in an airtight container
